We MUST receive you order on December 17th to guarantee a delivery date of 12/24/08.
3rd day air:
We need to receive your order on December 18th to guarantee a delivery date of 12/24/08 with 3rd day air.
2nd day air:
We need to receive your order on December 21st to guarantee a delivery date of 12/24/08 with 2nd day air.
Overnight:
We need to recieve your order on December 23rd before 12 p.m. CST to guarantee a delivery date of 12/24/08 with overnight shipping. Please confirm by phone at 605 332 5572.

Cheese and Swiss meat orders:
For ground shipping the order has to be in by December 11th, so the food items will ship Monday, December 14th. The next week is too short for ground delivery, only shipping addresses close to WI for cheese and CA for the meat can be shipped on Monday 12/21. Please confirm by phone at 605 332 5572.

It's the time of the year again where a nice raclette dinner with a cozy fire in the background sounds great. RacletteCorner offers 1/4 and 1/2 wheel raclette cheese and also 2 rectangular blocks (each block weighing 1.75lb); all vacuum sealed for freshness. For all of you who own a raclette grill, the blocks are great because the slices fit perfectly in the grill dishes. One block is usually plenty for a raclette dinner of 6. So you can save the other block for next time.

Please make sure to place your raclette cheese order early enough to be able to receive the cheese with free shipping (for any order $59 and up). Our raclette cheese has a shelf life of 6 months, so you can get the cheese and keep it for a long time in your refrigerator. You can even freeze the cheese.

Summertime Raclette

Summer is finally here! Does that mean that we have to put the raclette grill away? The answer is NO! While it is true that Raclette is typically associated with winter and snow, Raclette can be great instead of doing a BBQ!

Offer a mixed salad with a light vinaigrette dressing, cut tomatoes, red and yellow pepper, mushrooms, and onions for the grill, and melt Swiss Raclette Cheese. Raclette over an open fire

Raclette is a great way for entertaining. There are different ways of having raclette in the US. The most basic one doesn't even require any appliance.

All you need is an open fire, either outside or a wood burning fireplace inside your house or cabin. You'll need boiled potatoes, little french pickles (cornichons), pearl onions and of course a big chunk of raclette cheese to be placed close to the fire.
Watch the cheese carefully, when it starts bubbling, take the cheese away from the fire and, using a wide knife, scrape the melted cheese off the cheese block and over a boiled potato. Season with some paprika and fresh ground pepper.
Delicious! And every so often, the rind of the cheese has built up and you cut it off together with the melted cheese, that's the best part.

You have to take turns when doing raclette like this, so be patient! You'll have the best raclette experience when sitting around the fire, enjoy each others company while enjoying a nice glass of dry white wine with it.

The History of Raclette

Raclette is a Swiss Cheese dish that has been popular for centuries. There are different opinions about who started it. Some say shepherds in the mountains, other say it was the grape harvesters in the vineyards of the Valais region of Switzerland. No matter who, fact is that after a hard days work, they gathered around a campfire and held the cut surface of their local cheese against the glowing coals. As the cheese melted, they scraped (french: raclet) it off onto potatoes and pickles, thus coming to bear the name "raclette". Everybody agrees, that it took place in the Valais region of Switzerland and that the original cheese was made there.

Today there are countless varieties of healthy meals each person can prepare while sitting together at the dining table around an indoor grill.
