Raclette is a great way for entertaining. There are different ways of having raclette in the US. The most basic one doesn't even require any appliance.
All you need is an open fire, either outside or a wood burning fireplace inside your house or cabin. You'll need boiled potatoes, little french pickles (cornichons), pearl onions and of course a big chunk of raclette cheese to be placed close to the fire.
Watch the cheese carefully, when it starts bubbling, take the cheese away from the fire and, using a wide knife, scrape the melted cheese off the cheese block and over a boiled potato. Season with some paprika and fresh ground pepper. Delicious! And every so often, the rind of the cheese has built up and you cut it off together with the melted cheese, that's the best part.
You have to take turns when doing raclette like this, so be patient! You'll have the best raclette experience when sitting around the fire, enjoy each others company while enjoying a nice glass of dry white wine with it.
